Purées the family will love!

Call me crazy but I actually love eating my vegetables! However eating the same thing over and over gets boring real quick. Being on competition prep makes getting super creative difficult though. I found myself lying in bed wide awake in the middle of the night staring mindlessly on Pinterest when I came across a picture of puréed peas. Lightbulb!! I was instantly creating a purée menu in my head.
My first attempt to purée vegetables was simplistic and made with broccoli (the only green I have a struggle digesting). The end result? Delicious! So obviously I found myself back in the produce aisle brainstorming my next brilliant concoctions! That is where I got the ideas for my Snow Pea, Avocado, and Cauliflower purée and the Red Pepper Cauliflower purée. The true test to see if they passed was the fiancé (whom I sometimes have to force-feed his veggies) and from his facial expressions I'd say they were a win! The best part about all of this was it was super simple to make and the clean up was just as easy!
Now for the recipes......
SNOW PEA, AVOCADO, AND CAULIFLOWER PURÉE

1/2 head of organic cauliflower
2 bags of snow peas (preferably organic as well if possible)
1/2 avocado
1/2 cup warm water
sea salt & pepper
seasonings of choice - I used an italian blend
optional: 1 tbsp grass fed butter and/or 2 tbsp milk of choice -I usually prefer unsweetened cashew ( I did not use these though as I am on prep)

DIRECTIONS:
Steam cauliflower in a large pot until it softens (not too soft). Microwave or steam peas until same texture. Soft but not mushy. Cut avocado in half, take the skin off half and dice it up into larger chunks. Place the peas and the avocado with about 1/4 cup water into food processor and blend until smooth. Strain the cauliflower and then add it with the sea salt, pepper, seasonings, and the rest of the water into the food processor and continue to blend until smooth. Scoop out the purée into tupperware and set aside to cool before refrigerating. NOTE: Seasonings are to taste. I personally put about a 1/2 tbsp and then eyeballed the sea salt and pepper.
RED PEPPER CAULIFLOWER PURÉE

* 1/2 head of cauliflower
* 1/4 avocado
* 1/2 cup warm water
* 1 tbsp red pepper flakes
* sea salt and pepper to taste
Optional: 1 tbsp grass fed butter, 2 tbsp milk of choice, 1/4 cup plain yogurt, or 1 tbsp coconut oil with ghee (the ghee is a healthy alternative to butter and gives it that buttery flavor)
NOTE: They now also make red pepper infused coconut oil that could be used to add extra spice!
DIRECTIONS:
Steam cauliflower in a large pot until soft (not mushy). Strain and place cauliflower into the food processor. Dice up 1/4 of an avocado and add into food processor along with water, sea salt, pepper, and red pepper flakes, as well as any optional ingredients. Blend until smooth. Scoop out and place into tupperware or enjoy right away!
I found both of these to be magically delicious and very filling with just a half cup! The perfect side dish to any choice of protein!
